JPL’S SECRET COFFEE CAKE
Ingredients
1 box
Krusteaz Orange-Cranberry Muffin Mix
1 cup Water
½ cup Apricot
preserves
¼ cup Brown
Sugar
½ teaspoon
Cinnamon
Vegetable Oil
Set aside 1/4 cup dry mix. Place remaining mix, 1 cup
water and 1/2 cup apricot preserves in medium bowl. Fold in drained
cranberries. Spoon batter into lightly greased 8 X 8 X 2-inch pan. In
separate bowl, stir together reserved mix, 1/4 cup brown sugar and 1/2
teaspoon cinnamon. Sprinkle over batter. Bake at 350 degrees 40-45 minutes
or until toothpick inserted into center comes out clean.
Bake at 350 degrees for 57-62 minutes
or until toothpick inserted in center comes out clean.
